A Very Simple Omelet

Very simple Vegan omelet

Greeting! So we are continuing our experiment with garbanzo bean flour or chickpea flour. As I mentioned in my other recipes it’s a very nutritious bean. Today is a very simple and fast recipe to do a vegan omelet with veggies.

This Omelet Not Only Simple but Versatile

For this recipe, you can use any veggies you want mushrooms, zucchini, peppers, tomatoes, spinach, onion, asparagus anything that you have in your fridge. This veggie omelet is great during the workdays when you have to wake up early have a nutritious meal and go to work or work out. It will hold you probably for 4 hours or more.

Ingredients:

  • 1.4 cup of garbanzo flour
  • 1 cup of water or non-dairy milk( diluted with a bit of water)
  • salt
  • smoked paprika

Filling:

  • sauteed spinach
  • cooked peppers
  • cooked zucchini
  • fresh tomatoes
  • vegan pesto
  • fresh slices of avocado

Preparation:

  1. I would recommend cooking the veggies (spinach, zucchini, peppers) in advance or just in a separate pan. In a bowl add garbanzo bean flour, salt, paprika, and water (non-dairy milk). Make sure that the dough is not too thick or loose, so the omelet can be thin.
  2. Preheat the pan, add some oil and pour the dough. From this recipe, you might get 2,5 omelets. After finishing cooking the omelet, it’s time to add cooked veggies to the omelet with your favorite sauce. Topping it with avocado and tomatoes or other fresh veggies.
