Vegan sesame Oyster mushrooms with Soba Noodles

Have you heard of Oyster mushrooms and their benefits?! I didn’t know about those magical mushrooms until last year! Not only they taste good but the health benefits that you get from them are incredible.
Today we making Vegan Sesame Oyster Mushrooms with Soba noodles. This recipe is very simple and will take you a short period of time to cook a delicious dish.
Oyster mushrooms are very rich in nutrients for example carbohydrates, protein, vitamins, and minerals. Also, these mushrooms are low in sugar, fat, and cholesterol level.  Moreover, support your immune system, promote heart health, improves metabolism. (read more)

These mushrooms can be consumed raw or cooked. 
This time we just sautéing them with a bit of sesame oil and seasoning with pink salt and sesame seeds over soba noodles. 
Very simple but delicious!
Sesame oyster mushrooms with soba: ingredients
 Ingredients:
  • 1/4 cup of raw oyster mushrooms
  • 1/2 tsp sesame oil
  • 1/2  tsp sesame seeds
  • buckwheat soba noodles
  • 1/4 tsp pink salt 

Preparation:

  1. Heat the pan: add sesame oil, mushrooms and sautéed them for 10 min until you see they are almost brown.
  2. Boil some water and add buckwheat Soba noodles, boil for another 10 min
  3. Wash the Soba Noodles and drain all the water
  4. Add the Soba noodles to the plate and top it with mushrooms.
  5. Add toasted sesame seed and pink salt
  6. Enjoy!
