Today I would like to introduce a Vegan Tahini Chickpea Salad Recipe with cucumber and parsley. It’s very easy to make. And a great source of nutrients. Can be used as a spread on whole wheat toasted bread, or grilled veggies, or just by its self.
First, let’s see the benefits of chickpeas and tahini paste.
In a small bowl mix tahini paste with lemon juice. use a bigger bowl to mix chickpeas, cucumbers, parsley. Then add salt and pepper. Finally, to this mix add lemon tahini mix. Use a big spoon to mix everything together. Apply a bit of pressure so the chickpeas could break a bit. The consistency should be a little bit creamy with a chunk of chickpeas and cucumbers.
