Vegan Zucchini Noodle Curry

 

Greetings! I’m a big fan of curry. I always try to keep it vegan. But this time I also decided to keep it grain-free so you can feel great after a meal and less heavy. I called this recipe The Vegan ZuNoodle Curry. Recently, I’ve been making this dish at least once per week. It is so easy and fast, and also, has a small spiciness in it. During the winter it is so great to have something warm with a sauce base. This time we are using only veggies. Additionally, always feel free to add any other ingredients for your taste. For example, tofu, squash, sweet potato, also brown rice, or other grains as aside. This recipe is gluten-free, and also grain-free. Very light for dinner recipe options.

Why is it easy to cook?

  1. You can use any veggies you want to your own taste. So versatile.
  2. You can make it grain-free or add other grains to it.
  3. You only need to have a great curry powder or vegan curry paste (green or red) that will make your dish rich in flavors.
  4. Any non-dairy milk. I personally recommend using canned full-fat coconut milk. Trust me,  you won’t regret it. The curry sauce will be rich, thick and cream just from one can.
  5. A lastly, it only takes less than 30 min to cook.

Ingredients:

  • full coconut milk (trust me you will love it)
  • 2 tsp curry powder
  • 1/4 salt
  • 1/2 tsp lime juice
  • 1/4 cup onion
  • 1/4 cup leek
  • 1/2 cup cherry tomatoes
  • a hand of spinach
  • zucchini noodles
  • 3-4 bunches of broccoli rabe
  • 2 tbsp tomato sauce
  • 1/4 tsp sesame oil

Preparation:

  1. For this recipe, I would recommend cooking everything separately. Anything you cook in a pan don’t wash that pan 🙂
  2. PreheatAdd to the pan some oil cook first onions, leek, and cherry tomatoes. Then put them aside. Now in the same pan cook zucchini noodles very lightly almost sauteeing but don’t overcook the zoodles. Put it aside. Then sautee spinach and broccoli rabe, and put it aside.
  3. After that in the same pan add coconut milk and tomato sauce and curry powder, mix everything together. After that add all ingredients except zucchini noodles, cook everything together. After turn off the fire add zucchini and a splash of sesame oil, cover the pan, and let it sit for 5 min. And then ready to serve.
